Sweet Cream and Berry Crepe

Ingredients
Sweet Cream
4 oz Cream Cheese at room temperature
1/2 c Powdered Sugar (in 2 separate 1/4 c portions)
1/2 c Heavy Cream
1 t Vanilla Extract
Fresh Berries such as blueberries or strawberries
Basic Crepe (see recipe)

Make sweet cream by adding cream cheese, powdered sugar, and whipped cream (heavy cream whipped with sugar). Add vanilla after ingredients are mixed thoroughly.

Make crepes using the Basic Crepe Recipe
Assemble crepes with a layer of sweet cream and a thin layer of fresh berries. Fold crepes and serve.
Recipe
Allow cream cheese to rest at room temperature for at least 30 minutes to warm up. Warm cream cheese tends to mix better and provides less clumps in the final mixture.
Make whipped cream by mixing heavy cream with powdered sugar. When finished the whipped cream will have doubled in volume and will form stiff peaks on a whisk.
In a large bowl, mix together the cream cheese, powdered sugar, and whipped cream until uniform and the majority of clumps are removed. Add vanilla and mix into the sweet cream.
Make crepes according to the Basic Crepe Recipe.
The best berries for this recipe are blueberries and strawberries. To use strawberries, de-stem and cut thin slices. Set aside fruit for assembly.
Assemble crepes by spreading a thin layer of sweet cream around the entire crepe. Place a thin layer of fruit in the middle 3rd of the crepe to allow for folding.
Optional: Serve with a dusting of powdered sugar.
